Alright, lets see my favorite character is Shirou/Archer (Yes I consider them the same character). Kirei is my second favorite with either Gilgamesh or Rin being third, Cu is still great and I'm a big fan of Medea myself. I'm also fond of Saber and Illya. Avenger is amazing, from Zero I'm fond of Kiritsugu,Kayneth,Waver and Rider. Apo isn't far enough for me to chose a favorite, Leo was probably my favorite Extra character other then Nameless but that's not saying much.
On the Tsukihime side of things I've grown fond of Tohno recently and from the heroines I guess I'm fond of Ciel,Akiha and Kohaku. Aoko is also great
Oh and I'm also fond of Mikaya from Knk.

Shirou Emiya had been walking around the city for hours deciding to get a feel for the urban area he had just yesterday arrived in.
He had only two memories; the first, his sister Miyu and the second being of the contract he made with the Counter Force to save her.
"Alright I think I've got a decent idea of the city's layout I guess I should head back now." Oh, there had been some trouble here and there, a couple of werewolves and the like, but a single projected Noble Phantasm could bring them down.
"Miyu, I hope you're okay," thought Shirou as he made his way back to his hotel.

My MOS Personal canon is that post war Shirou's life becomes a near damm copy of Kerry's. Defeats Kirei at the end. HGW 6 start's years later with a different Holy Grail before that Shirou is hired by a Magus family to win the war and a member of that family falls in love with Shirou as he starts to regain his humanity. In HGW 6 he is forced to kill his wife and finds out that this grail is cursed as well he destroys it with his servant and in the resulting disaster is able to save one person. He dies telling that child about his dream and ask's Sakura to forgive him on his deathbed

Clarovoyance C: Via reinforcing his eyes Shirou can see up to 4KM away
Eye of Mind (True) D: Capable of calm analysis of battle conditions even when in danger and deduce an appropriate course of action after considering all chances of escape.
Aalya Contract: In order to have the power to protect his sister Miyu Shirou Emiya has made a contract with Aalya to become a counter guardian after death. This increased his stats to servant levels.
Origin
Shirou Emiya has only two memories. His Promise to protect his sister Miyu and the contract he made with Gaia to do so. After finding himself in Nexus City Shirou Emiya decides to try to save as many people as he can. Even if he put’s the people he loves ahead of them. (Note: Amnesia is only due to lack of backstory on Prisma Shirou, as it starts coming in the manga Shirou will start to remember his memories).
Weaknesses: Lacks the combat experience of EMIYA. Put’s the ones he loves over himself. Projected weapons are one rank lower than the original’s. Somewhat arrogant and isn’t afraid to fight foes who out match him.

Dislikes: People who would save random people over the ones that they love.

I'm not going to lie most of the stuff that these adaptations will miss (Avalon,Gods Hand and anything else I'm forgetting) can be explained in two simple episodes. EMIYA flashback episode's use this Anime to show us what kind of war EMIYA went through and a bit on his post war activities. You can also use EMIYA's war to explain thing's that are not explained in UBW or HF. It can be done in two episodes like the Kiritsugu flashback episodes in Zero. I feel this would be the best way to do it
